Naturally Sweetened Lemon Curd

3 eggs

1 tsp. lemon zest 

5 Tbsp. honey or pure maple syrup

1/3 cup lemon juice

2 pinches salt

1/4 cup coconut oil, or ghee

1 tsp. vanilla
