Date Caramel

  • 1 cup pitted dates

  • 1/4 cup reserved soaking water

  • 1/4 cup full fat coconut milk

  • 4 tsp. vanilla

  • 1 tsp. sea salt

1.  Soak pitted dates for 30 minutes to 1 hour.  If they are dry, they may need to soak longer; up to 24 hours.

Naturally Sweetened Lemon Curd

3 eggs

1 tsp. lemon zest 

5 Tbsp. honey or pure maple syrup

1/3 cup lemon juice

2 pinches salt

1/4 cup coconut oil, or ghee
