Stephenie's Salmon


I use to dread cooking fish, until a friend told me that she cooks almost all her fish at 400 degrees for 20 minutes. Hallelujah! It works like a charm! Now I look forward to cooking fish, because it's one of the easiest meals I can make. No worrying about a particular recipe. I just sprinkle and/or slather my fish with whatever sounds good and pop it in the oven. It comes out perfect every time. Such a simple tip, but it has really helped me in the fish department! My friend Stephenie didn't give me the particular recipe below, but the method is hers. She deserves all the credit for my much improved fish endeavors!

Easy Pesto Salmon

  • Organic Dijon Mustard

  • Salmon

  • Lemon

  • Salt and Pepper

  1. Heat oven to 400.

  2. Coat baking dish with a healthy and high heat safe fat.

  3. Sprinkle the bottom of the dish with salt and pepper.

  4. Place the salmon in the baking dish.

  5. Squeeze a bit of lemon juice over the salmon.

  6. Season salmon with salt and pepper.

  7. Generously spread mustard over the salmon.

  8. Bake for 20 minutes.

  9. Remove salmon from the oven and generously spread the pesto over the salmon.

  10. The residual heat will warm the pesto. Enjoy!
