You need this salsa in your life, I mean it! I'm not a great photographer, so this image really doesn't capture the deliciousness in store for you. We adore mangoes and this mango salsa does not disappoint. My wonderful sister-in-law gave me this recipe. It takes my lentil taco salad bowl and shrimp salad to a whole new level of yum!
Mango Avocado Salsa
2 Large Mangoes, diced, about 2 cups
1 Large Avocado, diced, about 1 cup
1/4 of a Red Onion, finely diced
1/4 cup Cilantro, minced
1 tsp. honey, more to taste if mangoes are not very sweet
Juice from one large lime- about 2 tablespoons
2 Tbsp. organic, extra virgin olive oil
1/4 tsp. Salt
Place first four ingredients in a medium bowl.
In a small bowl, mix together honey, lime juice, olive oil, and salt.
Pour over ingredients in bowl and toss to coat.
