Steffani's Black Bean Salsa

My Sister-in-Law has some great recipes. This is one of them.

I made it for a group recently and they liked it so much, they asked if I would post it.

Thanks Steffani for sharing! This is great over brown rice, in a wrap or salad, over eggs etc. I adjusted recipe to use RealTaste seasoning, but you can use the seasoning of your choice.

Steffani's Black Bean Salsa

  • 1 3/4 cup black eyed peas, or white beans, cooked

  • 1 3/4 cup black beans, cooked

  • 1 3/4 cup corn

  • 1 (14.5 oz.) can organic, diced tomatoes, drained

  • 1/2 bunch cilantro, minced

  • 1 small red onion, diced

  • 3-4 fresh tomatoes, diced

  • 2 avocados, diced

  • 1/4 cup raw, organic apple cider vinegar

  • 2 Tbsp. RealTaste Amore seasoning, additional to taste, if needed

  • 1 Tbsp. RealTaste Vida seasoning, additional to taste, if needed

  1. In a large bowl, mix together first 8 ingredients.

  2. Mix together apple cider vinegar, Amore and Vida.

  3. Pour over salsa and mix well.

  4. Add additional Seasoning to taste, if desired.

Notes

  • The amount of seasoning you will need, depends on if the canned tomatoes you are using are salted or not, as well as personal preference.

  • I prefer to use beans that I have cooked myself as they are much healthier, tastier and easier to digest than the canned variety. It's easy to do. This post tells you how. Please note, black eyed peas cook faster than many other beans, so check them after 4 hours and continue checking until done.
