Tomato Chicken Curry

Mmmm, I love curry.  I always smile when someone says that they don't like curry.  I mean, how is that possible?  It's like saying you don't like dessert!  Similar to dessert, there's a lot of variety and different curry flavors.  In fact, curry is simply:  a dish in a sauce, usually served over some type of grain, such as rice. The term curry actually comes from the word kari, meaning "sauce."  Curry flavor comes from a blend of spices, that does not usually include curry leaves. The blend of spices varies, from cook to cook and type of cuisine. Interestingly, it is thought that curry seasonings were originally a way to incorporate healing spices into one's diet.  RealTaste Care, Curry Seasoning contains a wonderful array of healing spices like turmeric, cinnamon, fenugreek, cumin, coriander and ginger.  It has 15 different ingredients, so it will bring you a flavorful dish without a lot of time and measuring.  It's carefully balanced between the bitter and sweet.  Care is a versatile curry powder and can be used in many different types of curry cuisine.  Tomato Chicken Curry is a good curry for kids and those who are curry-adverse.  

 

Tomato Chicken Curry

  • 2 Tbsp. RealTaste Care curry powder

  • 1/2 onion, sliced

  • 3 cloves garlic, minced

  • 1 (14 oz.) can organic coconut milk

  • 1 (14.5 oz) can diced tomatoes

  • 6 oz. tomato paste

  • 2-3 Tbsp. organic, pure maple syrup

  • 1-2 cups diced, pre-roasted chicken, seasoned with a bit of salt

  • Salt to taste, approximately 1/2 tsp. depending on salt level of tomatoes, chicken and broth

 

  1. Dry fry the curry powder and onions for 1 1/2 minutes.  

  2. Add the garlic, and cook for 30 seconds.  

  3. Add the coconut milk, diced tomatoes, tomato paste and maple syrup.

  4. Bring to a boil, reduce heat to simmer and cook uncovered for about 10 minutes, or until thickened.  

  5. Add chicken and warm through.  

  6. Serve over brown rice, quinoa, or millet.     

 

Notes

 

  • Although I haven't tried it, I think this recipe is well suited for the slow cooker.  Add all ingredients, except for chicken.  Cook for 6-8 hours on low, or about 4 hours on high.  Stir in chicken and warm through before serving.  

  • If you have little children, they may prefer the onion to be diced finely.  

  • You can add vegetables with the tomatoes, if desired.

  • For a vegetarian dish, substitute chicken with white beans, or chickpeas.
