Coconut Chips


A few weeks ago, I had a get together with some friends. One friend brought some coconut chips from Costco to snack on. They were yummy! I looked at the ingredents and decided to make some myself. I have been known to catch the oven on fire when toasting coconut, but I decided to forge ahead. These are a great snack and a perfect addition to my soaked granola.

You can find desiccated coconut chips by the shredded coconut at most health food stores. When I made this, a friend asked what desiccated meant. Frankly it sounds a little frightening. What exactly has been done to that poor coconut? Here's the definition in case you are wondering as well, "To preserve by drying." Ok, that doesn't sound too bad, so on to the recipe.

Sweet Coconut Chips

  • 1 Cup Organic, Desiccated Coconut Chips

  • 1 Tbsp. Organic, Pure Maple Syrup

  • Pinch Salt

  1. Heat oven to 300.

  2. Mix coconut, maple syrup and salt.

  3. Spread coconut on a parchment lined baking sheet.

  4. Bake 15 minutes. Stir after 10 minutes, then every five minutes until done.

TIPS

  • These are a sweet treat if you use 1 Tbsp. maple syrup. You can reduce the amount to 1 1/2 tsp. if desired.

  • You can also add more salt, if you want more of a salty sweet taste.

  • Experiment with different flavors. Cinnamon would be a nice addition, or cayenne for a little heat.

  • Do triple batch, so you will have some on hand to add to granola, sprinkle on hot cereal, snack on etc.

  • The more coconut that you cook, the longer it will take. Three cups will take 20-25 minutes.
