Gluten Free Chicken Noodle Soup

We don't eat much pasta, but occasionally a soup like this is a good option, especially when you're trying to entice picky eaters to a healthier fare.  Most kids and picky eaters like chicken noodle soup, especially when the vegetables are the standard carrots and celery; stick with vegetables your family enjoys.  

 

Gluten Free Chicken Noodle Soup

 

  • 1 small onion, or 1/2 large onion, diced

  • 1 Tbsp. chicken fat,  *see notes below

  • 6 cups chicken meat broth or bone broth

  • 1 Tbsp. RealTaste Hope Seasoning, or seasoning of your choice

  • 1 Tbsp. RealTaste Amore Seasoning, or seasoning of your choice

  • 2 cups vegetables of choice, diced

  • 1 cup (4 oz.) brown rice pasta

  • 2 cups cooked chicken, diced

 

1.  Heat onion and fat over medium-high heat and sautee until onion is tender.

 

2.  Add broth, seasoning and vegetables.  

 

3.  Bring to a boil and reduce heat to simmer.

 

4.  Cook for 10 minutes.  

 

5.  Turn heat to high and add pasta.

 

6.  Bring to a boil and cook for 12-15 minutes, or until pasta is done.

 

7.  Add chicken and heat through.  

 

 

NOTES

 

It's always best to pair the type of fat to the type of animal protein used.  The same is true of broth.  The properties in the fat and broth help to digest and assimilate the animal protein.  When making broth, the fat will naturally rise to the surface of the broth.  This may be skimmed, separated while hot in a gravy separator, or chilled and removed from the surface when solidified.  Reserve this fat in the fridge and freezer to use when cooking eggs and other dishes using chicken.  

 

Brown rice pasta takes a little longer to cook than standard white flour pasta.  We enjoy organic Tinkyada and Jovial brand brown rice pasta.  They both have a better texture than some other brands we have tried.   

 

Substitute 2 cups diced potatoes for the brown rice pasta by adding at the same time you add broth.   

 

You may also use frozen vegetables for a faster cooking version of this soup.  Simply add all the ingredients except for pasta and chicken.  Bring to a boil, add pasta and cook for 12-15 minutes, or until done.  Add chicken, frozen vegetables and heat through.
