Chocolate Mint Popsicles
1 cup raw milk and/or cream
1 tsp. high quality gelatin
1/2 cup spinach
1/2 cup fresh mint leaves, packed
1 organic raw egg yolk, from pastured chicken
1/4 cup raw cacao
2 very ripe bananas
3 Tbsp. pure maple syrup
2 tsp. vanilla
1. Place raw milk in blender. Sprinkle gelatin on top and let sit for 5 minutes to soften.
2. Add spinach and mint and puree until smooth.
3. Add remaining ingredients and blend until smooth.
4. Pour into molds and freeze.
Use very ripe spotted bananas for a better flavor.
The higher ratio of cream used, the creamier the final texture will be.
The gelatin, egg yolk and vanilla help to achieve a less icy texture.
Makes about 8 standard size popsicles.
