Berry Vinaigrette
This is delicious on a green salad with nuts, feta cheese, avocado and mixed berries, mango, or orange sections etc.
Berry Vinaigrette
Serves 6
1/4 cup blue berries or black berries
2 Tbsp. organic, extra virgin olive oil
1 Tbsp. lemon juice
2 tsp. organic, pure maple syrup
1/8 tsp. salt (or two pinches)
1. Place ingredients in a small blender or food processor.
2. Blend until smooth.
NOTES
Some people prefer a more tangy vinaigrette, some people like it a bit sweeter. Go ahead and adjust the maple syrup to your preference. The sweetness will also vary with the sweetness of your fruit.
Salad dressing tastes different on a salad than it does straight. Taste test it with a leafy green instead of a spoon... or finger.
