Easy Beef Curry Soup


One day I'll get a better picture of this soup. We seem to always gobble it up before I can snap a decent picture. This recipe is easy and comes together quickly, if you have prepped your meat and broth in advance, which is something I like to do in my 1 hour meal prep every week. This has a mild curry flavor and is a light soup, rather than a thick curry sauce. If you like spice, add some red pepper flakes to taste. Hope you enjoy!

Easy Beef Curry Soup

  • 1 Tbsp. beef tallow (fat)

  • 1 sliced onion

  • 1 Tbsp. RealTaste Curry Seasoning, or seasoning of your choice

  • 2 cups diced potatoes, unpeeled

  • 1 cup sliced carrots

  • 3 cups unsalted beef broth *see notes below

  • 1 tsp. salt, or to taste

  • 1 cup cooked beef

  • Salt and pepper to taste, if needed.

1. Over medium heat, saute onion and Care curry seasoning in fat until onions are tender.

2. Add potatoes, carrots, broth, and salt.

3. Bring to a boil.

4. Reduce heat and simmer for 30 minutes.

5. Add beef and simmer for 5 more minutes to heat through.

NOTES

You may use the fat that rises to the top of your broth to saute the onion and curry seasoning.

You can substitute other vegetables in place of the potatoes and carrots.

If desired, serve over brown rice, or another whole grain of choice.

If using a salted broth, omit salt and add it to taste at the end of cooking time.
