Refrigerator Thawing
(Safest & Easiest)
Allow 24 hours of thawing time for every 4–5 pounds of turkey.
Turkey Weight Time Needed in Refrigerator
4–5 lbs 1 day
8–10 lbs 2 days
12–15 lbs 3 days
16–20 lbs 4 days
20–24 lbs 5 days
Rule of thumb:
1 day per 4–5 pounds, always rounding UP.
Keep turkey in original packaging, placed in a pan to catch leaks, at ≤ 40°F.
Cold Water Thawing
(Faster)
Allow 30 minutes per pound.
Turkey must remain in a leakproof wrapper and be fully submerged.
Weight Time in Cold Water
8 lbs 4 hours
10 lbs 5 hours
12 lbs 6 hours
14 lbs 7 hours
16 lbs 8 hours
18 lbs 9 hours
20 lbs 10 hours
22 lbs 11 hours
Important:
Change water every 30 minutes to keep turkey below 40°F.
Cook immediately after thawing (no re-chilling).
Cook From Frozen
(Safe but Adds Time)
If you’re in a pinch, you can roast a turkey straight from frozen.
Add 50% extra cooking time
Remove bag of giblets with tongs as soon as the inside softens
Season after it thaws enough to access the cavity
Example:
14-lb turkey normally: ~3 to 3.5 hours at 325°F
From frozen: ~4.5 to 5.25 hours
Browning is slower — tent with foil if needed.
How to Tell When a Turkey Is Fully Thawed
Check these spots:
Under the wings
Inside the cavity
At the thickest part of the breast
You want:
Flexible legs
Soft breast
No ice crystals
Giblets easily removable
Juices that are clear, not pink
If the inside is still icy, it’s not fully thawed.
Where to Keep a Thawing Turkey in the Fridge
Keep it on the bottom shelf
Inside a rimmed roasting pan to catch drips
Keep packaging ON
Keep fridge at 37–40°F
Never thaw at room temperature — surface warms too fast while interior stays frozen.
