Corn, Bean and Grain Salad

  • 1 1/2 Cups Black Beans

  • 1 1/2 Cups Brown Rice, or another grain of your choice. The salad in the picture above was made with millet. Brown rice is my favorite in this salad, but since I love brown rice and tend to use it a lot in other dishes, I try to use other grain to mix things up.

  • 3/4 Cups Corn

  • 1/2 Red Bell Pepper, Diced

  • 1 Tomatoes, Diced

  • 2 Green Onions, sliced

  • 2 Tbsp. Cup Fresh Cilantro, Chopped

  • 1-2 Avocados, diced

Dressing

  • 1 1/2 Tbsp. Lime Juice

  • 1 1/2 Tbsp. Organic, Raw Apple Cider Vinegar

  • 6 Tbsp. Organic, Extra Virgin Olive Oil

  • 1 Clove Garlic, Minced

  • 3/4 tsp. Salt

  • 1/8 tsp. Garlic Powder

  • 1/4 tsp. Chili Powder

  • 1/2 tsp. Cumin

  • Pinch Cayenne Pepper

1. Place all salad ingredients in a bowl, except for the avocado.

2. Mix dressing ingredients together.

3. Pour dressing over the salad and mix well.

4. Add avocado just before serving.

TIPS

The leftovers are great as a wrap filling topped with ranch style dressing, or on top of a bed of greens.

Here is a link for a very similar recipe. This recipe is one of my favorites! You could substitute a grain for a portion of the beans and corn for a similar version to the recipe above.

If you have RealTaste Vida seasoning, you can use Vida and Salt, to taste, in place of the seasoning in the dressing above.
