Blueberry Syrup

  • 3/4 Cup Blueberries, Fresh or Frozen

  • 1 Cup Additional Blueberries, Optional

  • 1 Cup Organic, Pure Light Maple Syrup

  • 1 tsp. Lemon Zest, Optional

1/2 tsp. Vanilla, Optional

  1. Bring 3/4 cup blueberries and maple syrup to a boil in a small pan.

  2. Reduce heat and simmer for 15 minutes.

  3. Pour into a blender and puree until smooth.

  4. Place a fine mesh strainer over the pan. Strain syrup back into the pan and discard solids.

  5. At this point, you can add lemon zest and enjoy as a smooth syrup, or add additional blueberries to the syrup. Heat just until warmed through.

Store any remaining syrup in the fridge.

TIPS

You can use any grade of maple syrup that you like, although some people may prefer a lighter tasting maple syrup, so it does not compete with the blueberry flavor.
