Citrus Salad Dressing

  • 3 Tbsp. Organic, Raw Honey or Maple Syrup

  • 1 Tbsp. Apple Cider Vinegar

  • 3 Tbsp. Organic Extra Virgin Olive Oil

  • 1/4 cup Organic lemon or orange juice

  • 1 tsp. Organic Dijon Mustard

  • 1/2 tsp. Seal Salt

  • Poppy Seeds, Optional

1. Mix together in a small jar.

2. Store in the fridge for several weeks.

3. If the olive oil solidifies in the fridge, run the bottle under cold water, gradually increasing to hot. If the oil is still clumpy, set the jar in a small bowl with hot water for a minute or two.

NOTES

This delicious dressing has a subtle citrus taste and a delicate sweetness. It pairs well with a green salad topped with nuts, apples, and feta; a green salad topped with oranges, berries, nuts and parmesan; or any other salad where you want a bit of sweetness. I use this dressing in my Wild Rice Salad and Strawberry Einkorn Salad.

I like to have this dressing on hand as I use it at least once a week.
