My daughter loves the Mango Berry salad from Cafe Zupas. She asked for me to re-create the dressing. This is what I came up with and I think it's pretty yummy. Try it on a green salad topped with berries, mangoes and nuts.
Mango Salad Dressing
1 1/2 tsp. organic, lemon juice or organic, raw apple cider vinegar
3 Tbsp. organic, pure maple syrup
1/4 tsp. healthy salt
1/2 tsp. vanilla extract
1/2 cup organic mango chunks
1/2 cup thick kefir or raw yogurt
In a small blender or food processor, puree lemon juice, maple syrup, salt, vanilla and mangoes.
Stir into kefir or yogurt.
Store in fridge.
If your mangoes are not quite ripe, you may need a touch more maple syrup. This is a pretty sweet dressing, be generous with the maple syrup.
Unripe mangoes tend to be a little chalky tasting.
