Cilantro Lime, Red Cabbage Slaw
If you're not enjoying red cabbage on a regular basis, I encourage you to! Aside from being a good source of fiber, antioxidants, phytochemicals, vitamins, and minerals; red cabbage is anti-inflammatory and very beneficial for your digestive health, aka gut. In fact, red cabbage is a good source of the amino acid L-glutamine which can help your intestines rebuild and repair. It reduces inflammation in the gut, soothing ulcers, and other digestive issues. Red cabbage is a good source of vitamin C, which stimulates the formation of collagen, also essential for a strong and healthy digestive system. Anthocyanins in red cabbage may be helpful in preventing the protein that forms brain plaque from accumulating, making it a smart food for promoting brain health.
When my friend Diane mentioned that she had a red cabbage slaw that even young kids liked, my interest was peaked. Young people generally don't like cabbage. Diane doesn't go by a recipe, but when she told me she put lime, and cilantro in it, I was sold! I tried to re-create her salad with measurements. Here's what I came up with. Thanks Diane for the inspiration and another way to add red cabbage into our diet.
Red Cabbage Slaw
4 cups red cabbage, sliced thin (about 1/4 head cabbage)
1 medium carrot, shredded
1/4 cup cilantro, minced
1 green onion
Juice of 1 lime
1 Tbsp. honey
1/4 tsp. salt
Pepper to taste
1. Mix together cabbage, carrots, cilantro and onion in a large bowl.
2. Mix together dressing and toss with salad.
If you have a mandolin or a food processor, put it to work. Very thinly sliced cabbage will yield the best textured slaw.
