Einkorn Berry Salad


This is one of my favorite salads! I first ate it in Italy on a Get-A-Way with 7 of my friends. We all loved it! I just made a few slight adjustments. Jovial Foods is my favorite source for einkorn berries, I think they're a higher quality ancient wheat berry, than einkorn from other growers that I've tried. I also love Jovial's olive oil. A little tip: make your order around Christmas time to have freshly harvested olive oil shipped right to your door. We don't eat a lot of pasta, but when we do, we enjoy Jovial's brown rice pasta. Their chickpeas and tomatoes are great quality items as well. Can you tell I like Jovial Foods? Einkorn Berry Salad

1 1/2 cups dry einkorn berries

4 tomatoes, diced

1 cucumber, diced

2-3 green onions, sliced

3 Tbsp. fresh parsley, minced

3 oz. organic, feta cheese crumbles

6 Tbsp. organic, extra virgin olive oil

2 Tbsp. organic, raw apple cider vinegar

1/2 tsp. salt

1. Follow these instructions for cooking Einkorn Berries. You'll need to start a day in advance, for a soaked Einkorn version. Otherwise, click on this link for the original recipe from Jovial.

2. In a large bowl, combine cooked einkorn berries, tomatoes, cucumber, onions, parsley and feta cheese.

3. Mix olive oil, vinegar and salt together.

4. Pour dressing over salad, mix and enjoy.

TIPS

I think this salad has the best flavor after sitting for an hour, or two. It does store fine in the fridge, but I prefer it fresh.
